recently i’ve been craving sweets. perhaps it’s the pumpkin spice lattes i see everyone drinking or the halloween candy that’s in everyone’s cube.  it could even be the fact that the weather has turned, it’s cold and i just want a hot chocolate with baileys.  needless to say,  it’s been tough to avoid the chocolate stash but, we’re 6 weeks into it and i’m staying strong.  with the cravings not going anywhere and my new found obsession with pumpkin, i decided to concoct a new dish.  PTL, this turned out. kyle’s even a fan.   i threw together a yummy new recipe with some leftovers we had…all you need are squash, zucchini, and pumpkin.  all fall-ish food items.

preheat oven to 350 degrees

all veggies should be cut into the same sizes

– cut up 2 yellow squash into cubes
– cut up 1 green zucchini into cubes
– cut up 2 cups of pumpkin into cubes

throw into a large casserole dish and add extra virgin olive oil liberally. stir around to ensure all veggies are coated.  sprinkle cinnamon and fresh, ground nutmeg over entire dish to your liking. bake for 20-25 mins, or until pumpkin is soft.

this is an excellent side dish to any meal or even for dessert! enjoy.
