I hate to admit, but I have a really bad habit. When I find a recipe I fall in love with, I eat it for weeks on end, maybe for months, and then need to take a really, really, long break because I've officially over-done it. Everything in moderation, I know, but I can't help myself. This is my new, favorite, healthy breakfast. It's simple, easy to make, and works well for batch cooking, so you have breakfast for the entire week.
INGREDIENTS:
1 cups red or white quinoa
1 pound frozen peas
Eggs
Chipotle Tabasco
DIRECTIONS:
Cook quinoa, 1 cup quinoa and 2 cups water. Bring the quinoa to a rapid boil Once boiling, cover with a lid, and lower to a simmer for 15 mins
Once the qunioa is cooked (liquid should be gone) turn off the heat, and add the bag of frozen peas. Mix well, avoid over mixing and mashing your peas
While the peas defrost with the hot quinoa, fry your eggs to your liking
Spoon your quinoa-pea mixture into a bowl and add your egg ontop
Add Tabasco Chipotle to your liking ( I like mine spicy!)
